Banana Protein Pancakes with Grilled Bananas

The talented Nina and Jessie from @feedingfitfoodies created this recipe for us using All Good Bananas. We are huge fans of their creations, and look forward to sharing more of their amazing work with you.

Serves 2:

Combine all the pancake ingredients in a food processor, adding as much nut milk as required to achieve a batter-like consistency. Heat coconut oil in a frying pan and pour batter in to make pancakes, we opted for smaller pancakes so we could have more in a higher stack. Keep pancakes warm in oven as you cook in batches. 

 

To make the grilled bananas, top and tail the bananas and slice in half lengthways, leaving the skin on. Sprinkle with cinnamon and place face down in the pancake pan, add more coconut oil if required. Cook until golden then flip and cook skin side down so bananas are nicely cooked through.

 

Remove pancakes from the oven, stack and serve with the grilled bananas and toppings of your choice.
