Banana breakfast muffins

We're always on the hunt for inspiration to keep banana loving monkeys happy. so, we asked Kelly Gibney to help us out. Kelly is a wholefoods writer and Dish magazine columnist, and we're so pleased to be able to share her recipes with you.

Preheat oven to 170 degrees celsius

Place the bananas, eggs, coconut sugar and almond meal in a food processor.

Blitz until relatively smooth. Add the vanilla, baking powder, vinegar and coconut. Run for a further minute.

Remove the blade from the mixing bowl and stir in the apple and sultanas using a wooden spoon.

Line 10 holes of a 12-hole muffin tin with patty cases or grease well. 

Spoon mixture evenly into 10 holes. (You can fill 12 holes if you want a slightly smaller muffin). 

Bake for approximately 30 minutes until a skewer comes out clean when inserted

Leave to cool completely before eating.
